Lovin' the Peaches

I found the best looking organic peaches the other day at Sprouts. I had never been there, as I usually go local or Whole Foods. But I made a wrong turn and ended up at Sprouts. (ok - I got lost and just remembered a Sprouts in the area) The peaches looked amazing! Eaten alone they were delicious - but I thought I would try some Peach Cobbler.
I tried a different method. I put the cobbler batter at the bottom instead of plopping it on the top. If you enjoy dumplings then you will like this method. I let some of the batter peek through on the edges just to get an idea of the texture and taste without all the peaches and juicy goodness covering it. I think for this batter I made I prefer it covered. I have another Peach Cobbler recipe I created with a wonderful crust that I will also post. It's all good. I need to work on the balance between the sweeteners I am using on this one. My hubby John wants the cobbler sweeter. I think it was ok - so as soon as I get the happy medium I will post the recipe. Now - I just have to find that Sprouts again.
