I am very excited to unveil my first batch of Kombucha. Thanks to my wonderful teacher at the Living Light Culinary Institute, James Sant, for sharing one of this SCOBY's. I have bottled it but now need to wait a couple of days for the carbonation to happen. I have been reading some articles about Kombucha and am going to put it to the test - along with some other things I need to be doing to improve the balance in my system.
