Bubbling Apple Bake

Some people have been asking about the different flavors for the baked oatmeal I posted this morning. I have decided to add my apple version. In our family we have different favorites. When I make the topping of nuts and coconut I end up sprinkling 1/3 with pecans, 1/3 with walnuts and my brother loves just the coconut. The best thing about recipes is you can always change things up. Enjoy.
Bubbling Apple Bake

Set oven at 350 degrees
DRY INGREDIENTS
2 cups Cubed Granny Smith Apples
1 cup Cubed Red Apple
1/2 cup Blue Berries
3 TB Lemon Juice
1 tsp Cinnamon
1/4 tsp ground cloves
1/2 tsp Himalayan pink salt
4 cups Rolled Oats (not instant)
WET INGREDIENTS
4 cups almond milk (or any other non-dairy milk)
1/3 cup pure maple syrup
3/4 cup Frozen Apple Concentrate Juice (not sweetened)
1/2 tsp Himalayan salt
1 tsp Vanilla
1 tsp Cinnamon
1/2 tsp Nutmeg
TOPPING
1 cup Any combination of nut type topping you enjoy.
I like:
1/2 cup unsweetened coconut flakes or shredded and
1/2 cup sliced almonds –
(pecans or walnuts also works great with apples)
Directions:
Place apples and blue berries in a casserole dish.
Place the cut apples and the berries in a large bowl and sprinkle them with lemon Juice, cinnamon, cloves, and salt so that the spices are spread out evenly on the fruit.
Spread the fruit out evenly in the casserole dish.
Cover the fruit with dry oats. Set aside
In a large bowl combine all wet ingredients.
Pour wet ingredients over the oats and fruit in casserole dish.
Make sure all the milk is evenly distributed.
Sprinkle nut topping evenly over the oats.
Bake at 350 degrees for 45 to 60 minutes minutes.
