Baked Cherry Oatmeal Jubilee

When I am not having my usually green breakfast smoothie I enjoy my Baked Cherry Oatmeal Jubilee. I have other versions of this baked oatmeal - like Bubbling Apple Bake - but the point is I love oatmeal. In my other life BV (before vegan) I loved it with cream, butter, and brown sugar. I didn't even think about having fruit. Now I have found a tasty and healthy alternative.

I would suggest organic oats and if you are very sensitive to gluten - gluten free. Oats are actually a gluten-free food but commercial oats are processed in facilities where other non gluten-free products are also processed - like wheat. So if you are very sensitive - find a brand that specializes in processing the oat in a gluten-free environment.

This recipe is very versitile. I first ate baked oatmeal when I started my vegan journey in Weimar at the Newstart program. I adapted the recipe and continue to use the blueprint to create tasty oatmeal recipes. Change the toppings - change the fruits - go crazy and get creative in your kitchen by using other tasty nutritious ingredients. ENJOY!

Cherry Oatmeal Jubilee

3 cups oats

3 cups almond milk

2 cups Cherries (fresh is best but natural frozen cherries works too)

1 cup coconut milk

1/3 cup maple syrup

1/3 cup frozen orange juice (preferably organic and no added sweeteners)

1 tsp Himalayan pink salt

½ cup unsweetened shredded coconut

½ cup chia seeds

½ cup sliced almonds

  1. Spread the cherries on the bottom of a baking dish

  2. Cover cherries evenly with the chia seeds and the rolled oats

  3. In a large bowl mix the milks, maple syrup, frozen orange juice, and salt.

  4. Pour the liquid mixture evenly over the rolled oats and cherries

  5. Sprinkle coconuts and almonds over the milk covered oats.

  6. Bake at 350 degrees for 50 minutes.

This is baked oatmeal so it will need added nut milk of your choice to get it to the consistency you enjoy.
