I'm Back - And Ready to Rumble!

It seems as if I have been gone forever. Actually it's just been a little more than a week. I went to the beautiful city of Fort Bragg to take 1 of 3 classes I need to complete my Gourmet Chef certification. But I am back and I am ready to rumble in the kitchen. I have some recipes I am excited to share with you and some other things I want to shake up. I LOVE shaking things up in the kitchen.
The picture to the left is of a Vegan Ceviche - the second course our class served for a Farm to Table catered event. We were the caterers. It was lots of work - but so much fun. I have now completed the catering course. NEWS: My brother, who has also been a die hard carnivore forever, has now been a vegan for 2 months. I knew the transformation I went through giving up meat was amazing - but his has been unbelievable to me. He is the original Wimpy from Popeye. He loves hamburgers - everyday of the week. He is a major diabetic. He takes 4 insulin shots per day and also on diabetic meds in pill form. Yesterday he went without even one shot. His blood sugar stayed steady all day and was fantastic this morning. Well - it's happening. He wants off all his meds - and we are praying and working on it. Of course it's not just the diet change. He is walking for about 10 minutes after each meal too along with working on the new lifestyle. I am just excited about his progress.
