Creamy-filled Strawberries

Fast and Easy – Cream-filled Strawberries

1 can of Coconut Milk*

2 Tablespoon Agave (You can substitute with Maple Syrup)

1 tsp Vanilla

1 Basket of Strawberries

  1. Place a can or two of coconut milk in the refrigerator to solidify the coconut milk. (About an hour or more)

  2. While the coconut is chilling - hull the strawberries, and clean them. I love using a tomato shark to scoop out a well in the center of the strawberry. Don't throw away the precious meat of the strawberry - you can use it for juicing later. Set the strawberries aside as you prepare the whip cream.

  3. Once the coconut milk has thickened - carefully scoop out the hardened coconut milk and place in a bowl.

  4. Whip all ingredients together until fluffy. If the consistency is too watery add more of the set coconut milk you have waiting for you in the fridge.

  5. 4. Place the whipped coconut cream into a pastry bag with a decorative nozzle. If you do not have a decorative pastry bag - don't worry.

  6. In a tall glass stuff the corner of a baggie down into the glass making sure that you can now fold the opening of the baggie around the opening of the jar. This should hold the baggie in place almost like a second pair of hands. Place the whipped cream into the baggie. Do not overfill the bag. Pull the baggie up and twist the opening so that the cream does not come out. Snip off a very small corner of the baggie. You are now ready to pipe the cream into the strawberries.

  7. Carefully pipe the coconut whip cream into each of the strawberries. Set in a refrigerator until serving.

*When I am using a can of coconut I use the Thai brand. It has a more consistent quality. Put the can of coconut milk in the refrigerator for about an hour so the milk solidifies to the top and the coconut water will stay on the bottom. Scoop out the coconut milk gently from the top. You will need to be careful not to place the spoon too deep into the can as the water is collected in the bottom of the can and you do not want all that water in your mixture.
